Acadian Festival welcomes Food Network’s Danny Smiles
The Agricultural Exhibition and Acadian Festival of the Evangeline Region welcomes the Food Network personality, Chef Danny Smiles, to its annual Festin acadien avec homard (Acadian Feast with Lobster). This popular event will take place on September 1, at the Acadian Musical Village (Expo-Festival Centre) in Abram-Village, at 5:30 pm.
After completing his studies at St Pius X culinary institute in Montreal, chef Danny Smiles set off for Italy where he interned for Michelin Star chefs in Brescia and Soverato, and then returned to Montreal to begin forming his own creative and professional perspective.
He found his greatest challenge and inspiration working under Chuck Hughes at Restaurant Le Bremner in Montreal, Quebec. “I have always been excited to work with fish and seafood, and the focus at Le Bremner is decidedly aquatic,” says Danny. His professional relationships flourished there and he was promoted to Chef de Cuisine in November of 2011.
The Festin acadien avec homard, a signature event of the Fall Flavours Festival, will offer a meal consisting of the traditional Acadian dishes, chicken fricot, rapure and meat pie as well as lobster, potato salad and an apple pie dessert. Also, to add to the festive spirit, participants will be entertained by lively music, songs and step dancing.
This feast will be offered in a relaxed atmosphere, the meal being served family-style, where the food will be brought to the tables on trays that will be passed around the table. The waiters and waitresses will be dressed in traditional Acadian costumes and the room will be decorated in the Acadian colours.
